Shrimp, Avocado & Pomelo

Simple and at the same time light and filling combination of shrimp, avocado and pomelo serves as a refreshing appetizer or a light meal during warm weather. This easy and delicious recipe is an excellent healthy way to enjoy shrimp in a setting of citrus flavor of pomelo and rich mellow taste of avocado.


  • 1 pomelo
  • 20 shrimp (cooked, medium size)
  • 1 large or 2 small avocados
  • Grapeseed oil
  • Dijon mustard "à l'ancienne"
  • Salt, pepper


  1. Peel off the shrimp.
  2. Peel off pomelo and keep only the flesh (to avoid bitterness). Slice into medium sized pieces.
  3. Peel and slice avocado into small pieces.
  4. Make a dressing with grapeseed oil and Dijon mustard "à l'ancienne".


Place shrimp, avocado, and pomelo on a plate (one per guest). Serve with the dressing.
