Domaine du Chalet Pouilly practices viticulture methods that focus on an utmost respect for terroir. Minimal intervention during the ripening process is often challenging but rewarding at the same time, as it sets off the development of the unique flavors and aromas of these wines.

The estate produces Chardonnay from the appellations of Pouilly-Fuissé Premier Cru, Pouilly-Fuissé, Saint-Véran, and Mâcon-Solutré.

Our Wines 101

  • All wines are produced and bottled at the estate
  • Pouilly-Fuissé matures in 400, 500 or 900 liter French oak barrels for 9 to 10 months, up to 20 months for Premier Cru, vintage dependent
  • Out of total barrel supply, 12-16% new oak is introduced annually
  • Saint-Véran and Mâcon-Solutré mature in thermoregulated tanks at 18°C for 8 to 10 months, depending on vintage
  • Naturally occuring yeast is used for fermentation (a carefully selected yeast from Burgundy is added in rare cases when levels of natural yeast are not sufficient due to weather conditions)
  • Low residual sugar
  • Minimal use of sulfites
  • Natural vintage-marked cork added at bottling
  • HVE (High Environmental Value) certification
