Cod fish is a versatile fish that can be cooked any way you desire with the ingredients you have on hand. This easy-to-cook dish complements the taste of cod fish with the flavors of tomatoes. It can serve as a light dinner for your family or a couple of friends. Serve with black rice to bring more originality and color into the meal.

Ingredients

  • 800g Atlantic codfish fillets
  • 2 shallots
  • 1 garlic clove
  • Flour
  • 40g butter
  • Olive oil
  • 1 can diced tomatoes (750g)
  • Salt, pepper, parsley

Tip

Serve with black rice to bring more originality and color into the meal.

Steps

  1. Cooking tomatoes: Thinly chop shallots and garlic clove. Throw everything in a frying pan with olive oil. Cook a few minutes. Then add diced tomatoes. Cook on medium-low heat for 30 minutes. Meanwhile prepare the fish.
  2. Cooking fish: Roll the cod into some flour. Remove extra flour from the fish fillets. Then cook with butter on a frying pan for approximately 10 minutes (medium heat). Add salt and pepper.
  3. In the oven: Preheat the oven to 180°C. In a small pot, drop the fish and then pour the tomato sauce on top. Put the dish in the oven to keep it warm while the rice is being cooked.

Serving

Serve with black rice.
