Harvest and Vinification of Pouilly-Fuissé 2010

The harvest of Pouilly-Fuissé 2010 started on September 21 2010, a sunny day with mild temperatures. Prior to the harvest a number of thorough grape samplings had been made to assess the maturity of the grapes. The results showed a good concentration of natural sugar that would lead to an alcoholic strength of 13°.

Based on the growing conditions in 2010 to insure good quality of the wine only several plots where selected to mature in French oak barrels for 18 months:

  • «La Rousselonne» planted in 1949 (since 2010 grown according to the organic methods)
  • «Pragnes» planted in 1947
  • «Chailloux» planted in 1949
  • «La Mure» planted in 1985

The harvest from the vineyards listed above was crushed in a pneumatic wine press and the juice was left to gravity settling for 24 to 48 hours (100NTU). Then it was transferred into 400 liter French oak (Allier-Tronçais) barrels to start the alcoholic fermentation.

Once over, the fine lees (remainings of the unfinished wine after the initial settling) were stirred («bâtonnage») weekly until the malo-lactic fermentation began. As a final step, the wine matured on the fine lees until bottling in the late January 2011.
